Veg Cheese Omelette

Ingredients

  • Eggs – 2
  • Cheese Cube – 1 (grated)
  • Capsicum – 1 small (finely chopped)
  • Tomato – 1 small (finely chopped)
  • Onion – 1 small (finely chopped)
  • Salt – to taste
  • Green Chilly – to taste (fine chopped)
  • Coriander – to taste (fine chopped)
  • Milk – 2 tbsp
  • Oil – 1 to 2 tspn

Procedure

  1. Put the finely chopped onion in a medium size bowl.
  2. Add green chilly, capsicum, tomato and salt into the same bowl.
  3. Mix all the ingredients well.
  4. Add the eggs and beat the mixture with a blender.
  5. Add cheese, coriander and milk into the mixture.
  6. Again blend the mixture for a  minute.
  7. Keep a frying pan on medium flame and pour the cooking oil in it.
  8. When the pan is sufficiently hot, pour the mixture in it and reduce the flame and cover the pan with a lid.
  9. This will help the vegetables cook faster.
  10. Keep checking at regular intervals.
  11. When the omelette starts puffing turn it upside down.
  12. After turning the omelette upside down, don’t cover it again.
  13. After a few seconds remove the omelette from the pan.
  14. Sprinkle cheese and coriander on the omelette and serve it hot with Tomato ketchup.

Coconut Masala

Ingredients

  • Coconut – 1 big (grated)
  • Onion –  5 – 6  big
  • Oil – 5-6 tbsp

Procedure

  1. First take the onions, cut them into halves and slice them.
  2. Keep a saucepan (kadai) on medium flame and pour the cooking oil in it.
  3. You’ll need to use your judgment while  pouring the oil into the saucepan (kadai) as too much oil can spoil the masala.
  4. Once the oil becomes hot, put sliced onions into it and stir them well till they become golden brown.
  5. Then, add the grated coconut in it and again stir the mixture continuously so as to avoid burning the masala.
  6. Keep stirring  the mixture till it becomes golden brown and the texture becomes dry.
  7. Allow the masala to cool and then grind it into a thick paste.
  8. Add water only if required.

Uses

This masala can be used in many recipes to make gravy. You’ll see this masala used in many recipes on my blog later.

Sweet Chapati Rolls

Ingredients

  • Jaggery  – 3 to 4 tbsp crushed
  • Home made Ghee – 5 to 6 tbsp
  • Chapatis – 2 nos

Procedure

  1. Take home made ghee in a small bowl and add crushed jaggery to it.
  2. Mix it well till it becomes a fine and smooth paste.
  3. Spread it on both the chapatis and then roll them.
  4. Now cut them into small  rolls and serve.
