Sabudana Wada is a very famous dish especially for upwas. For doing this recipe you need to do preparations one day in advance.

  • Sabudana (Sago) – 3 big bowls
  • Green Chill finely chopped – 8-9
  • Ground Nuts – roasted and ground – 1 big bowl
  • Potato – boiled and mashed – 3 big
  • Cumin seeds – 2 tspns
  • Salt to taste
  • Sugar – 1/2 tspn
  • Cooking Oil – to deep fry

  1. Wash the Sago (Sabudana) in a big pot and soak it for about 1/2 hr.
  2. Now drain it completely and keep it aside for a whole night with the lid on.
  3. Take the sabudana, ground nuts, sugar, mashed potatoes, green chilly, cumin seeds and salt in a big bowl.
  4. Mix all the ingredients to make a soft dough; add water if necessary.
  5. Apply oil on your palms and make medium size flat balls (don’t press them very hard as they won’t puff).
  6. On one side keep a frying pan (kadhai) ready on high flames with oil in it.
  7. When the oil is hot slow down the flame to medium and put those balls in it.
  8. Fry them till they turn golden brown from both sides and puff a bit.
  9. Remove them on kitchen tissues and serve hot with curd or upwas chutney.

Be careful while preparing the soft dough and the flat balls. Make sure that you do not crush the ingredients too hard. The Sago (Sabudana) beads should be seen even after making the flat balls. If they get squeezed they may not puff and will become hard on frying.
